Quick Salmon Fettuccine

This is my go to cheap and cheerful Simple Salmon Pasta.ย  As you can see these are not expensive ingredients and because my cherry tomatoes, courgettes, lemons and flat leaf parsley all came from our garden it’s even better!

This is my first ever flat lay shoot on my new wooden backdrop.ย  It was taken at lightening speed while my one and a half year old sat in his highchair having a quick snack before dinner.ย  So I have probably broken all the cardinal rules on this and I will look back one day and go “oh dear god this is awful” but it’s all a learning curve and I’m working on it!!

Simple Salmon Fettuccine

Simple Salmon Fettuccine
Ready In: 20 minutes

  • 200g Smoked Salmon
  • 2cloves garlic
  • 1 medium size onion
  • 5 cherry tomatoes
  • 1 avocado
  • 1 courgette
  • 1 lemon zest and juice
  • 1 whole packet Fresh Fettuccine (I use tri colour but you can choose your own favourite) * please note if you use dry it will take 10-12 minutes.
  • 500ml cream
  • 1/2cup Grated Parmesan
  • optional โ€” flat leaf parsley

Dice your onion, and garlic.ย  ย  Shred your courgette they should like ribbons (use a speed peeler or your normal peeler) and quarter cherry tomatoes.ย  Zest your lemon and juice it also.ย 

Boil salted water for pasta.ย  Cook pasta 5 minutes then strain – set aside.

Sautรฉ your onion for 2 minutes then add garlic/lemon zest and courgette.ย  Once soft add cream and lemon juice stir through to heat for 1-2minutes and slightly thicken.

Then add salmon and pasta to sautรฉed mix to heat.ย  Mix to coat pasta and ingredients in the sauce.

To serve sprinkle with chopped flat leaf parsley and sprinkle with some grated Parmesan and cracked pepper โ€” happy days!
